It comes from Finca Tres Milagros in Dota-Tarrazu, Costa Rica, a farm created by the Facusse Family and Camilo Merizalde. The Black Honey process, using cherries harvested at 22º Brix and naturally sun-dried, results in a coffee with highly prized floral notes combined with sweet and fruity flavors.
Coffee roasted exclusively using natural fuels: almond shells from Les Garrigues and firewood from Montsec.

Specialty coffee refers to a premium category of coffee characterized by meticulous production methods and exceptional quality. Unlike mass-market commercial coffees, specialty coffees are consciously cultivated, roasted, and brewed to highlight unique organoleptic qualities and distinctive flavor profiles, resulting in exceptional cups.
As high-quality products, each specialty coffee origin can vary greatly in its final flavor. These differences between origins are explained by multiple variables: origin, region, processing method, drying method, and finally, the skills of the roaster. However, specialty coffees often share a tendency toward sweet, floral, fruity, chocolatey, or caramel notes with balanced acidity.
Specialty coffees are high-quality Arabica varieties grown in high-altitude coffee-producing regions, sourced from plantations focused on sustainable agriculture, responsible farming, and fair trade, with an ethical and transparent supply chain.
To determine whether a coffee can be classified as specialty coffee, professional cupping sessions are conducted in which experienced tasters (Q-Graders) evaluate coffees based on aroma, flavor, acidity, body, and other attributes. After analyzing the profile according to these standards, the coffee receives a score from 0 to 100 based on the criteria established by the SCA (Specialty Coffee Association). A score of 80 marks the threshold that distinguishes specialty-grade coffees from commercial commodity coffees.
